"Sky" has the property of being inclusive, and has a broad heart and accepts everything regardless of the other party.
It means that. This dish is a classic Japanese dish, and represents a space by offering a combination of dishes originally made from each ingredient.

Chinese tea HANAE hanae
It is a white tea produced in Lincang, Yunnan Province, made from tea trees about 100 years old in a naturally cultivated tea plantation located at an altitude of 2000-2100m. HANAE is characterized by its gorgeous citrus fruity aroma that spreads in the mouth, its natural sweetness, and the richness that is sucked into the back of the throat.
This tea is selected by Yuya Toda of "IDLE MOMENT", which sells Chinese and Taiwanese teas based in Niigata. Ayurvedic knowledge suggests that the astringency at the end of a meal is very good for preventing overeating and promoting digestion.

08 丹波霧
この露打ちは丹波霧であり
篠山の香りであり
儚く消えるあり様は
彼女の作品を纏っている
柔らかい光でもあるのです

茶席には露は付き物です。席中の唯一の自然である花には露を打ち、みずみずしさと共に生命を吹き込み、敬意を表するのがならいとされています。乾ききったものを嫌う茶趣において茶の湯では路地の露、掛け物の露、茶杓の露など、露を打つことはとても重要視されています。日本料理でも茶筅をひと振りし腕ぶたに水滴を散らすことがあります。これも露打ちです。この作品では食事中の皆様に露を打ちました。僅かに触れる露の質感、篠山で摘んだ枝葉を芳香蒸留水にし、まるで篠山の森の中にいるかのような感覚で、触覚や視覚、嗅覚とともに、ひとつの食から立体的に広がる体験をしていただきました。

※1 サ神 解説
古語では「さ」とは耕作を意味します。「さ」とは山の神であり、春になると里に降りてきて田の神・稲霊となります。それゆえに桜とは、「さ」の神が降りる坐=鞍（くら）の意から「さ・くら」となり、稲の苗が早苗=さ・なえなのも、苗を植える女性が早乙女=さ・おとめなのも、田の神・稲霊＝「サ神」から来ています。旧暦五月の頃は稲作にいそしむ月であるから「サ月」と名づけられました。篠山の名前の由来には、笹がたくさん生い茂っていた笹山に城を築いたことと、神聖な意味を持つこのサ神信仰が深く関係していると言われています。この作品では、名前の由来にもなっている笹の葉で、おむすびを包んで蒸しました。おむすびは、右手(身ミ・物質のこと)と左手(霊ヒ・霊的なもの)を結んで作ります。また米(天照大神)、水(月読命)、塩(素戔嗚)は、それぞれ三騎士が司る最も重要なもので、それらの霊力を人の手によって結んだとても神聖な食べ物です。シンプルな食べ物ですが、そこには計り知れないドラマや深い意味があり、それらを彼女のものづくりの姿勢と重ね合わせて作りました。またお米は、ひとつ前の作品でお出しした、篠山で採れた食材達の端材からとった出汁で炊いています。そのことでひとつづつの作品に繋がり(関係性)を持たせました。
※2 選ぶ 解説
世界中の様々な生地を集める生地コレクターでもある、デザイナー池邊祥子さんのコレクションの中から選んだ生地に紐付けたカクテルドリンクを、最後に召し上がっていただきました。このドリンクは生地から選びます。どんな素材を使って作られたどんな味の飲み物かは、生地には記載されていません。直感を大切にし選んだ生地が、その日を表す飲み物であればという思いで制作しました。「選ぶ」という行為が、あらゆる場面でその人の人生に大きく関わっているということを表しています。
